Ingredients

The Steak:

  • 2 New York Strip Steaks (approx. 10 oz each, 1-inch thick)

  • Coarse Sea Salt

  • Freshly Ground Black Pepper

  • 1 tbsp Olive Oil (optional, for coating)

For Serving (Suggestions):

  • Red Wine Reduction Sauce

  • Creamy Mashed Potatoes

  • Fresh Salad: Arugula, Cherry Tomatoes, and Balsamic Vinaigrette

Instructions

  1. Season the Meat: Remove the steaks from the refrigerator 20 minutes before cooking to reach room temperature. Rub them lightly with olive oil and season generously with coarse sea salt and freshly ground black pepper on all sides.

  2. Fire up the Barrel: Preheat your MisterBarrel to 400°F (200°C). Ensure the grill grate is clean and hot.

  3. The Sear: Place the steaks directly on the grill grate.

    • For Medium-Rare: Grill for 6 to 8 minutes per side.

    • Chef's Tip: Cooking time depends on thickness. For precision, use a meat thermometer. You are aiming for an internal temperature of 130°F - 135°F for medium-rare.

  4. Resting is Key: Remove the steaks from the grill and place them on a cutting board or warm plate. Let them rest for 5 minutes. This allows the juices to redistribute throughout the meat, ensuring every bite is tender.

  5. Assembly: Serve the steak whole or sliced. Pour the warm wine sauce over the meat and serve alongside a scoop of creamy mashed potatoes and the fresh arugula and cherry tomato salad.
